This one-pot, 30-minute meal is cozy, hearty, and packed with flavours. Perfect for busy days!

✨ What You’ll Need:
• 3 tbsp avocado oil or any vegetable oil
• 1 tsp cumin seeds
• 2 cans chickpeas (drained and rinsed, or use 1 can for more gravy)
• 2 bell peppers (red and yellow, diced)
• 1 medium red onion (finely diced)
• 5 Thai chili peppers (minced) 🌶️
• 1 inch fresh ginger (grated)
• 6-7 garlic cloves (minced) 🧄
• Spices: 1 tbsp curry powder, 1 tsp cumin -coriander powder, 1 tsp red chili powder and salt per taste
• 1.5 to 2 cans coconut milk (adjust for desired creaminess) 🥥
• 1/2 - 1 cup water adjust for desired gravy
• 1 cup fresh spinach 🌿
• 1 large lime 🍋

✨ How To Make It:
1️⃣ Heat oil, add in cumin seeds and sauté onion, garlic, ginger, and Thai chili until fragrant.
2️⃣ Stir in spices and add salt, then add bell peppers and cook for a few minutes.
3️⃣ Toss in chickpeas, pour in coconut milk, and let it simmer until thick and creamy.
4️⃣ Finish with spinach and a squeeze of lime juice.

This hearty and flavorful chole recipe is here to level up your dinner game 😋. Whether you’re pairing it with bhature, naan, or rice, this dish will hit all the right notes. Here’s how to make it!

🛒 Ingredients:

Whole Spices:
3 cloves
2 small cardamoms
1 big cardamom
1-inch cinnamon stick

Ground Spices:
2 tbsp chole masala
1 tsp coriander powder
1 tsp amchur powder
1/2 tsp red chili powder
1/4 tsp haldi (turmeric)
2 tsp ginger-garlic paste

Other Ingredients:
2 large onions (pureed)
3 medium tomatoes (pureed)
1.5 cups boiled or canned chole (chickpeas)
1 tbsp kasuri methi (dried fenugreek leaves)

Tadka:
1/4 tsp hing (asafoetida)
1-inch ginger (julienned)
3-4 green chilies (slit)

👩‍🍳 Method:

1️⃣ Heat some ghee and oil in a pan, and add the whole spices. Let them sizzle and release their aroma.
2️⃣ Add onion puree and sauté until golden brown.
3️⃣ Stir in the ginger-garlic paste and cook until the raw smell disappears.
4️⃣ Add the ground spices (chole masala, coriander, amchur, chili powder, and haldi) and mix well.
5️⃣ Add tomato puree and salt, cooking until the oil separates.
6️⃣ Transfer the mixture to a pressure cooker. Add a little water and pressure cook for 3 whistles for that amazing consistency.
7️⃣ Open the lid, add boiled chole, and mix well. Crush kasuri methi between your palms and stir it in.
8️⃣ For the tadka, heat some ghee in a small pan. Add hing, ginger, and green chilies. Pour this fragrant tadka over the chole.
