I call this bowl a “lazy day lifesaver.” It’s perfect for those evenings when you’re short on time but still craving something wholesome and packed with flavor. I mean, who doesn’t love a one-bowl meal where you get all the best parts of a burrito without the fuss of wrapping it up?

Spice your Beans:

  • Step 1 – Drain and rinse a can of boiled beans
  • Step 2 – Add salt
  • Step 3 – Add Piri Piri seasoning
  • Step 4 – Add Taco seasoning
  • Step 5 – Lemon Juice
  • Step 6 – Mix it up!

Spice your Rice:

  • Step 1 – Add Cilantro to cooked rice (day old is better!)
  • Step 2 – Add Lemon juice
  • Step 3 – Add black pepper
  • Step 4 – Mix it up!

Quick and easy Guac:

  • Step 1 – slice up a ripe avocado
  • Step 2 – Add fresh cilantro
  • Step 3 – Add salt
  • Step 4 – Add black pepper and finally mash it using a fork or in a mortar and pestle

And for the Veggies:

  • Step 1 – Add oil to a pot
  • Step 2 – Add Julianne chopped onions
  • Step 3 – Sauté the onions for a couple minutes
  • Step 4 – Add any coloured peppers of your choice
  • Step 5 – Add salt
  • Step 6 – Add sweet corn
  • Step 7 – Add Piri Piri spice
  • Step 8 – Add taco seasoning
  • Step 9 – Add lemon juice
  • Step 10 – mix it up and let it rest for couple minutes

Ingredients
  

Black Beans:

  • 1 can black beans, drained and rinsed
  • 1 teaspoon salt
  • 1 tablespoon Piri Piri spice
  • 1 tablespoon taco seasoning

Rice:

  • 1 cup cooked rice, old rice works as well
  • 2 tablespoon cilantro
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

Guac:

  • 1 cup ripe avocado
  • 1 tablespoon cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Veggies:

  • 1 tablespoon olive oil
  • 1 cup red onions, julienne cut
  • 2 jalapeños cut crosswise into ¼-inch rings
  • 2 cups mixed peppers
  • 1 teaspoon salt
  • ½ cup sweet corn kernels
  • 1 teaspoon Piri Piri spice
  • ½ tsp taco seasoning
  • 1 tablespoon lemon juice

Optional Toppings:

  • 2 tablespoon salsa
  • 1 handful fresh chopped cilantro
  • ½ fresh squeezed lemon juice
  • sprinkle of shredded cheese of your choice

Instructions
 

  • Prepare the Rice Base: Start by placing a generous spoonful of the cilantro-lime rice at the bottom of your bowl. This fragrant rice, with its zesty lemon and fresh cilantro, is the perfect foundation for your burrito bowl.

  • Add the Hearty Black Beans: Next, spoon in the seasoned black beans over the rice. These beans, cooked with taco seasoning and piri piri spice mix, add a smoky depth of flavor and a satisfying protein boost.

  • Layer the Sautéed Veggies: Now, add your colorful, sautéed veggies. The blend of red onions, mixed peppers, jalapeños, and sweet corn, all seasoned with taco and Piri Piri spices, creates a spicy, sweet, and savory medley that brightens up the bowl.
    1 tablespoon olive oil, 1 cup red onions, julienne cut, 2 jalapeños cut crosswise into ¼-inch rings, 2 cups mixed peppers, 1 teaspoon salt, ½ cup sweet corn kernels, 1 teaspoon Piri Piri spice, ½ teaspoon taco seasoning, 1 tablespoon lemon juice
  • Top with Creamy Guac: Dollop a generous amount of fresh guacamole on top of the veggies. The creamy avocado, with a hint of cilantro and lemon, adds richness to balance the spiciness from the jalapeños and peppers.

  • Optional Garnishes: Feel free to finish off your burrito bowl with any of your favorite toppings! A sprinkle of shredded cheese, a spoonful of salsa, or a handful of fresh cilantro would all work wonderfully.
