What to do with leftover Pav Bhaji? - Make Masala Pav!

Ingredients
  

  • 1 tablespoon butter
  • 1 teaspoon cumin seeds
  • 1 medium onion, fine chopped
  • 2 tablespoon fresh coriander, chopped
  • 1 cup leftover pav bhaji gravy (see note)
  • ¼ cup water to thin out consistency of gravy if needed
  • 1 tbsp/tsp red garlic chutney (depending on your spice level)
  • 2 cups leftover dinner rolls or buns, tore in large chunks
  • 1 tablespoon chopped onions to garnish for crunch
  • 1 tablespoon fresh coriander to garnish

Instructions
 

  • Heat some butter to a pan.
    1 tablespoon butter
  • Add in cumin seeds and let them splutter.
    1 teaspoon cumin seeds
  • Add in chopped onions and cook for a cook minutes until translucent.
    1 medium onion, fine chopped
  • Add in fresh coriander and leftover pav bhaji gravy. Add water to thin out consistency if needed.
    2 tablespoon fresh coriander, chopped, 1 cup leftover pav bhaji gravy (see note), ¼ cup water to thin out consistency of gravy if needed
  • Add a touch of red garlic chutney.
    1 tbsp/tsp red garlic chutney (depending on your spice level)
  • Throw in the pav pieces tore in large chunks.
    2 cups leftover dinner rolls or buns, tore in large chunks
  • Garnish with onions and coriander
    1 tablespoon chopped onions to garnish for crunch, 1 tablespoon fresh coriander to garnish

Notes

  1. Leftover Pav Bhaji Gravy - if you don't have this then simply make an onion tomato gravy and add any veggies of your choice like green peppers, cabbage, and spices to your preference that you would like to be coated in the pav.
  2. Aromatics: We used red garlic chutney which really gives it that street food style kick but feel free to use plain minced garlic if you prefer - sauté with onions so it's not raw.
